Fun With Food: Classic Chicken Salad Pita

I love chicken salad. I love any recipe that lets me throw a bunch of ingredients in a dish without adding a single trace of green vegetable and still call it a salad. This one has some green in it, but I like getting my serving of roughage from the apple with pairs nicely with the diced cherries. This makes 4 servings, so either portion it into cups and freeze for future lunches, or use it for lunch with friends.

 

Ingredients:chixsalad

6 oz grilled boneless, skinless chicken breast, diced

3 green onion stalks, finely chopped

1/4 cup flat leaf parsley, finely chopped

1 medium granny smith apple, peeled, cored and diced

1/4 cup dried montmorency cherries, finely chopped

1/4 cup chopped walnuts

1 cup plain greek yogurt

4 whole wheat pitas

 

No mystery to the preparation here – toss it all together in a bowl and divide it into 4 equal portions that go in the pita pockets.
