You see this recipe come up a lot as a good recipe to make with kids. I’m here to tell you that’s a load of crap. These cookies are nothing short of amazing if done right, but the kiddos love to mix the batter until they’re chalky brown turds of cookie fail. I’ve highlighted some important tips. Save these for the kids’ bedtime. You won’t regret it.
- 1 ½ cups white sugar
- 3 tablespoons unsweetened cocoa powder
- ½ cup margarine
- ½ cup whole milk
- 1 pinch salt
- 3 cups quick cooking oats
- ½ cup creamy peanut butter
- 1 teaspoon vanilla extract
In a saucepan bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute. It’s important for the texture of the cookie that you allow the mixture to come to a full, rolling boil and then time your minute.
Add quick cooking oats, peanut butter, and vanilla; mix well. Don’t over mix- the more you stir, the duller the finish.
Working quickly, drop by teaspoonfuls onto waxed paper, and let cool. If possible, aim to have the cookies on the wax paper within five minutes.
